Veggie nourish bowl with chop chop dressing

Ingredients

1/2 cup quinoa

2 tbsp olive oil

½ red onion

1 zucchini  

1 lemon

1 package EPICURE Veggie Burger

1 avocado

1 c cocktail tomatoes

2 c greens of your choice

½ cup shredded cheddar cheese

DRESSING

1 pkg Epicure Chop Chop Salad

2 tbsp olive oil

2 tbsp water

1 tbsp EPICURE Honey Mustard

DIRECTIONS

Cook quinoa in microwave according to this recipe.

Using 4 in 1 Mandoline slice onion. Cut zucchini in half lengthwise, shred one half with mandolin, make ribbons using Y Peller with the second half.

Juice lemon with 2 in 1 Citrus Press.

In 4 cup Prep Bowl combine Veggie Burger mix with 1/2 c hot water, 3 tbsp lemon juice. Stir until combined. Stir in 1 cup grated zucchini and 1 cup quinoa. Let stand 5 minutes. Preheat sauté pan over medium heat, add 2 tbsp olive oil.

Using Prep Pro Scoop make little sliders. Fry them for 3 -4 minutes.

Whisk dressing ingredients.

Assemble the Nourish Bowl with little sliders on the top.

Drizzle with Chop Chop dressing.
