Ranch Chicken Pinwheels

RANCH CHICKEN PINWHEELS

Ingredients

1 tsp EPICURE Creamy Ranch Dip

1 tsp EPICURE Chipotle, Bacon and Cheddar or

1/4 tsp EPICURE Chipotle Aioli mix

1 c mayonnaise

2 c light cream cheese

4 slices of bacon

¼ red bell pepper

¼ green bell pepper

¼ yellow bell pepper

1 chicken breast

3 spinach tortillas

Epicure Red Pepper Jelly to serve

DIRECTIONS

Place mayonnaise, softened cream cheese and Creamy Ranch in 4 cup Prep Bowl, mix well. Microwave bacon in Multipurpose Steamer until crisp, discard grease, chop bacon into pieces.

You can substitute bacon with Epicure Better than Bacon topper.

Chop peppers very finely, add to cheese mixture.

Microwave chicken in the rectangular steamer for 3-4 minutes. Chop chicken into bite sized pieces and add to the cheese mixture until blended. Spread filling, roll without squeezing the filling.

Cut off hollow ends. Wrap into cello and place in the fridge for an hour. Then cut them on diagonal and place on sheet pan lined with silicone liner. Bake 250-300F for 5-7 minutes.

Serve with Red Pepper Jelly. Enjoy!
