Pesto Shrimp Pizza
PESTO Shrimp pizza
Ingredients
1 prebaked pizza crust/ homemade crust
1 c of Feta cheese
12 shrimp washed, tails removed
1 tsp of olive oil
¼ tsp Epicure Pesto Mix
OVEN ROASTED TOMATOES –
Pint of cocktail tomatoes cut in half
2 tsp olive oil
2 tsp Epicure Marinara Sauce Mix
Epicure Sea Salt
Epicure Pepper
PESTO -
2 tbsp Epicure Pesto Sauce Mix
2 tbsp water
½ c Parmesan Cheese
1/3 c olive oil
1/3 c toasted, chopped pine nuts
DIRECTIONS
You can use prebaked crust or make your own.
Prepare oven roasted tomatoes- toss tomato halves with olive oil and Marinara Seasoning. Place tomatoes on a sheet pan lined with sheet liner, make sure that your tomatoes are spread out and facing up. Sprinkle with salt and pepper.
Roast in the oven for 2.5 hours at 250 F.
Prepare Pesto - place Pesto sauce mix in 4 C prep bowl, add water, let sit for 2 minutes, add Parmesan Cheese, olive oil and pine nuts. Mix well.
Toss shrimp with olive oil and Pesto mix.
Cook shrimp for couple minutes in frying pan.
Put cooling racks on top of baking sheets lined with sheet liners, this will allow for the free airflow. Place crust on top, assemble your pizza.
Bake 5-7 minutes in the oven at 450F.
