Hearty Italian Vegetable Soup with Spaetzle

HEARTY ITALIAN VEGETABLE SOUP with SPAETZLE

Ingredients

4 C water

1/2 C dry, small shell pasta or spaetzle

1 pkg Epicure Hearty Minestrone

1 C dry lentils or 1 can lentils

1 can diced tomatoes

1.5 C mixed, chopped veggies

Epicure’s Sea Salt (Grinder), to taste

DIRECTIONS

Place dry lentils in Epicure Multipurpose Steamer and follow these instructions to cook them.

Combine pasta, if you prefer over spaetzle, and water in a large saute pan over high heat.

Stir in seasoning and diced tomatoes. Cover and bring to boil. Reduce heat to medium and simmer, uncovered, for 10 min.

Stir in lentils and veggies. Simmer for 3 minutes.

Serve with grated parmesan cheese.
