Pesto Spaetzle

PESTO SPAETZLE

Ingredients

1/4 C milk

5 tbsp water

3 eggs

1.5 tsp EPICURE Pesto

1.5 C flour

1 tsp (5 ml) EPICURE Sea Salt

1/2 tsp EPICURE Black Pepper to taste

DIRECTIONS

Makes about 4 cups.

Bring salted water to a simmer in a medium pot over medium heat.

Whisk milk, water and eggs in a small bowl. Combine flour, pesto, pepper and salt. Pour milk mixture into the dry ingredients, whisk until smooth.

Use a metal spoon to drop dough into a boiling water.

Cook in batches. Cook spaetzle until they float to the top, about 1-2 minutes. Remove with a slotted spoon. Toss lightly with olive oil to prevent sticking.

Use spaetzle instead of small shell pasta in soups and other dishes. Enjoy!
