Egg White Bites

Eggwhite BItes - Starbucks copycat

Ingredients

16 oz egg whites

1/2 cup shredded mozzarella cheese

1 cup 2% cottage cheese

1/4 cup crumbled feta cheese

1 Tbsp Oh! So Onion

2 tsp Onion Garlic and Herb seasoning

2 scoops unflavored Collagen Peptides (19 gms protein)

oil to use in muffin tray

1/2 cup roasted red pepper - finely diced

1/2 cup fine chopped spinach

DIRECTIONS Makes approx 16 muffins bites

Preheat oven to 350°F (175°C).

  1. Blend together eggs, spices, collagen and cheese. Mix in a blender until smooth and slightly frothy.

  2. Assemble the cups. Evenly divide veggies among light oiled muffin cups

  3. Pour egg mixture on top of veggies to fill each cup. 3/4 full

  4. Bake for 15-18 minutes.

  5. Remove from oven and sprinkle with cheese. (optional)

  6. Return to oven and bake for another 5 minutes.

  7. Let cool slightly, remove bites, and enjoy!

Storage Tip: Freeze extras in bags for quick breakfasts!
