Sun-dried Red Lentil Fusion
Ingredients
1 tbsp olive oil or vegetable oil
½ onion
2 carrots
1 stick celery
2 tbsp EPICURE Za’atar Seasoning
1 tsp EPICURE Minced Garlic
1 tbsp tomato paste
2 c water
1.5 tbsp EPICURE Vegetable broth
1.5 c red lentils rinsed and drained
1/2 c oven roasted tomatoes
1 can coconut milk
1 c spinach
½ c grated Parmesan cheese
DIRECTIONS
Using 4 in 1 Mandoline slice and chop veggies.
Cook the veggies in a Sauté Pan with 1 tbsp of oil for a couple minutes. Add Za’atar, minced Garlic and tomato paste. Stir well and let it simmer for another 4 minutes. Mix water with Vegetable Broth, then add it to your veggies. Incorporate lentils and oven-roasted tomatoes. Cook for another 5-7 minutes. Add coconut milk and washed spinach. Cook until the spinach is wilted. Finally, add Parmesan cheese. Mix well. Plate and serve with rice or Naan bread. Enjoy!
