Creamy Indian Soup

Ingredients

1 large carrot

2 large russet potatoes

1 celery stick

1 small onion chopped

1 tsp olive oil

2 tsp EPICURE Minced Garlic

1.5 tbsp EPICURE Vegetable Broth+ 3 c water

14 oz cup crushed tomatoes

1 pkg EPICURE Aloo Gobi

1 cup cooked red lentils

1 can coconut milk

EPICURE Sea Salt, EPICURE Black Pepper(grinder) to taste

DIRECTIONS

Chop first 3 ingredients, place in Round Steamer and microwave covered for 6 minutes. Heat oil over medium-high heat in a Sauté Pan.

Dice onion and add to the pan, add minced garlic.

Sauté for 5 minutes. Cook lentils.

Whisk water and vegetable broth in 4 cup prep bowl, add to the pan.

Add tomatoes, Aloo Gobi Seasoning and cooked lentils. Let simmer for 15 minutes.
