Cookoff chili
Ingredients
0.5 lb ground beef
0.5 lb ground pork
1 medium red onion chopped
1 shallot
1 tsp olive oil
2 orange bell peppers
1.5 cups frozen corn
1 can (796ml/27oz) low sodium crushed tomatoes
2 tbsp EPICURE Chili Seasoning
EPICURE Sea Salt, EPICURE Black Pepper(grinder) to taste
DIRECTIONS
Caramelize onion in the Sauté Pan over medium high heat for 5 minutes. Once onion is translucent add meat. Make sure to break up the clumps with Ground Meat Separator.
Meanwhile dice peppers, drain and rinse black beans.
Add peppers, corn and beans to the pan. Cover and cook for 3-4 minutes until slightly tender. Add Chili Seasoning and crushed tomatoes. Bring up to a simmer and cook 5 minutes until all incorporated. Serve with a slice of Cheddar & Jalapeno Cornbread.
