Cranberry Nut Crisps

Ingredients

2 cups Whole Wheat flour

2 tsp baking soda

1/2 tsp Epicure Sea Salt

1 Tbsp Epicure Holiday Seasoning

2 cups buttermilk

1/4 cup brown sugar

1/4 cup honey

1 cup dried cranberries

1 cup walnuts, chopped

1/4 cup flax seed, ground

1/4 cup pumpkin seeds

DIRECTIONS

Preheat oven 375 degrees F

In a medium bowl combine flour, baking soda, salt, and holiday seasoning. stir to combine in a large separate bowl combine buttermilk, brown sugar and warmed up honey. Mix well.

Add dry ingredients to wet bowl , stir a few strokes but don't overmix. Add cranberries, flax and chopped nuts and seeds. stir till blended.

Lightly butter 4 mini loaf pans. Pour batter into pans.

Bake 30 minutes till golden. check with toothpick - should come out clean.

Remove from pans and cool on rack. Then move to plastic bag and chill for a few hours or overnight.

Once cool, slice loaves as thin as possible and place slices on a silicone lined baking sheet.

Bake 15 minutes then flip and bake an additional 7 minutes or until crisp and deep golden brown.
