Cheeseburger Zucchini Lasagna
Ingredients
1 pkg EPICURE Cheeseburger Pasta
1 pkg EPICURE Mac & Cheese
1 lb lean ground meat
1 tsp olive oil
½ c water
2 tbsp ketchup, optional
1 big zucchini
½ - 3/4 c shredded mozzarella cheese
1 can 14oz. crushed tomatoes
1.5 tbsp EPICURE Marinara
DIRECTIONS
Heat oil in Sauté Pan over medium-high heat, add burger meat. Using our Meat Separator brake up meat chunks.
Place Mac & Cheese, Cheeseburger Pasta mix with water in 4 c Prep Bowl, whisk well, add 2 tbsp of Marinara or ketchup.
Fry meat until it turns brown, add liquid ingredients and simmer until it thickens.
Make Marinara sauce by placing tomatoes and Marinara seasoning in Multipurpose Pot and simmering for 10 minutes.
Slice zucchini into thin strips using 4 in 1 Mandoline. Place Marinara sauce in the bottom of a casserole. Reserve 1/2 cup of sauce.
Spread meat mix on top of 3 zucchini strips, roll up and set rolls inside the casserole.
Top with remaining Marinara and grated cheese. Bake in 375 F oven for 15 minutes.
