CAPRESE PESTO CHICKEN with HERBED POTATOES

Ingredients

1 tbsp EPICURE Pesto

1 tbsp balsamic vinegar

1 tbsp honey

½ c water

2 chicken breasts

2 big russet potatoes

½ tsp Epicure SPG

½ tsp EPICURE Italian seasoning

Mozzarella slices

Balsamic vinegar

DIRECTIONS

Make marinate by mixing Pesto, balsamic vinegar, honey and water, add to meat and marinate for at least 20 minutes. Place chicken on BBQ and grill until the juice comes clear. Top chicken with mozzarella slices and let cheese melt. Remove from the grill, add sliced tomato and drizzle with balsamic vinegar.

Slice potatoes and steam in Multipurpose Steamer for 6-7minutes. Toss potatoes with SPG, Italian seasoning, and ½ tsp olive oil, place on the BBQ. Grill until done.
