Black Bean & Corn Chowder

Ingredients

2 russet potatoes

3/4C fresh or frozen corn niblets

1 red bell pepper

2C hot water

1 EPICURE Creamy Chowder

2C milk, your choice

2 cans low sodium black beans or prepare beans from scratch

Epicure Better than Bacon Topper

EPICURE Sea Salt and Black Pepper to taste

DIRECTIONS

Using y-peeler peel and dice potatoes.

In Round Steamer, combine veggies and liquid. Cover, microwave on high until veggies start to soften, 7-10 minutes. Meanwhile, in 4C Prep Bowl whisk together Creamy Chowder and milk, set aside.

Once veggies are soft, stir in reserved milk mixture. Microwave, uncovered, 5 minutes, until broth has thickened. Stir in beans. Microwave, uncovered, 1-2 min, until beans are heated through.

Serve in bowls; sprinkle with Better than Bacon topping.
