Alfredo Chicken Casserole
Ingredients
12 oz cooked Penne Pasta
1 small package fresh spinach - 5-6 oz
1/2 cup Epicure Pesto Mix - see recipe
1 package Epicure Alfredo Sauce
1 1/2 cup milk (of choice)
1 tsp Epicure Nourish Broth
1/2 cup water
2 1/2 cups chopped chicken (see Epicure Rotisserie Chicken)
1 cup part skim Mozzarella cheese
1/4 tsp Epicure Smoked Spanish Paprika
2 Tbsp fresh chopped Basil ( optional)
DIRECTIONS
Cook pasta in a 12 cup Multipurpose Pot according to pasta directions.
Spinach Layer: Make pesto according to Epicure’s directions on Pesto jar. In a medium bowl add spinach and pour pesto over. Using Grip and Grab tongs toss till well seasoned throughout.
Alfredo layer: Open package with Prep Pro Scissors. Put into 4 cup Prep bowl, add milk, 1 tsp nourish broth mix and water. Using the mini whisk stir till no lumps.
For layering - In your Multipurpose Steamer, add half of alfredo mixture. Spoon spinach over Alfredo sauce using Sauté Spoon, level it out.
Now with the remaining Alfredo in a larger bowl, add chicken and cooked pasta, mix well. Place half the chicken alfredo mix over spinach, then layer remaining spinach, top with remaining chicken pasta mix. Place cover on and microwave for 7-9 minutes.
Remove from oven, sprinkle 1 cup grated cheese and microwave 1 -2 minutes till cheese is melted.
Remove and sprinkle on Smoked Spanish Paprika and sliced basil. ENJOY!
