Banh Mi Rice Noodle Salad with Pork Meatballs

Ingredients

1 lb lean ground pork (20 meatballs)

2 tbsp Epicure Banh mi Seasoning

1/2 tsp Epicure SPG

1 package rice noodles

BANH mi DRESSING

¼ c olive oil

2 tsp Epicure Bahn mi Seasoning

1 tbsp soya sauce

2 tbsp rice vinegar

2 c red cabbage sliced

2 radishes

pickles

DIRECTIONS

Mix meat and seasonings in 4 Cup Prep Bowl until incorporated. Using Prep pro Scoop (2 tbsp) shape meat balls. Place meatballs on sheet pan lined with silicone liner. Bake in 400F preheated oven for 15 minutes.

Cook rice noodles in the Multipurpose Pot for 7 minutes.

Place dressing ingredients in prep bowl, whisk well.

Slice cabbage and radishes with 4 in 1 Mandoline

Mix cabbage, noodles, radishes, pickles with Banh Mi dressing. Plate it, top with meatballs. Enjoy!
