Brussels Sprouts Coleslaw with Honey Mustard dressing

Ingredients

1 c dry chickpeas

½ tsp baking soda, water

¼ c Epicure Honey Mustard

¼ c olive oil

1 tsp Epicure Zaatar seasoning

½ tsp Epicure Minced Garlic

4 c shredded brussels sprouts

1/5 red onion sliced

½ c sliced almonds

1/3 c dried strawberries/cranberries

DIRECTIONS

Prepare chickpeas. Shred brussels sprouts.

Mix Honey Mustard, olive oil, Za’atar seasoning and Minced Garlic. Juice lemon with 2 in 1 Citrus Press add to the dressing mix, whisk well.

Place coleslaw ingredients in the medium size bowl, add dressing, toss salad using Grip & Grab . Enjoy!

I also made this recipe with steamed Brussels Sprouts, equally delicious.
