Asian Walnutty Zoodles with Smoked Squid
Ingredients
1 tbsp of olive oil
2 medium size zucchini
2 raw squid tubes
5 radishes
¼ c chopped walnuts
¼ c crumbled Feta Cheese(optional)
1 Tbsp lemon juice
1 tsp Epicure Asian Stir Fry
1 tbsp Epicure Toasted Sesame Seeds
1 tsp Epicure Seafood and Fish Seasoning
¼ tsp Epicure Smoked Spanish Paprika
½ tsp Epicure Minced Garlic
Epicure Sea Salt to taste
Epicure Pepper to taste
DIRECTIONS
Slice squid into 1/4-inch-thick rings.
Using 2 in 1 Epicure Citrus Press squeeze fresh lemon juice, add to squid, set aside.
Turn the zucchini into zoodles by twisting into the Veggie Twist & Spiral Slicer
Heat oil in Epicure Perfect Pan. Add walnuts Asian Stir Fry, Sesame Seeds and gently fry them to deepen their flavor, add spiralized zucchini. Be careful, zucchini is very easy to overcook.
I like my Zoodles al-dente, 2-3 minutes. Set aside.
Using the same pan, add Minced Garlic, Seafood and Fish Seasoning, Smoked Paprika, add squid and cook, tossing frequently, until squid is opaque and cooked through, about 1 to 2 minutes.
Using Epicure 4 in 1 Mandoline slice radishes very thinly.
Toss zoodles with squid, top with radishes and Feta Cheese.
