Zucchini Cheese Bread
Ingredients
3 C (750 ml) flour
1/3 C (80 ml) sugar
1 Tbsp (15 ml) baking powder
1 tsp (5 ml) Sea Salt (Grinder)
1 tsp (5 ml) baking soda
1 tsp (10 ml) Epicure Herb & Garlic Dip Mix
1 tsp (10 ml) Epicure Greek Dressing
1 C (250 ml) grated zucchini
1/3 C sunflower seeds
1/3 C (80 ml) melted butter
2 eggs
1 C (250 ml) buttermilk
3 Tbsp (45 ml) grated Parmesan cheese
DIRECTIONS
Preheat oven to 350° F (175° C). Grease and flour a 9" x 5" (23 x 12.5 cm) or 12” x 2.5”(37x7.5cm) loaf pan.
Whisk first 5 ingredients in a large bowl.
In another bowl, mix herbs with grated zucchini and allow to sit for at least 10 minutes.
Stir melted butter, eggs, buttermilk and Parmesan cheese into flour mixture. Add zucchini mixture and stir to combine. Add sunflower seeds.
Pour into prepared loaf pan and bake for 50 - 65 minutes.
