VEGAN Chickpea Feta Bake

Vegan chickpea feta bake

Ingredients

1 tbsp olive oil

½ red onion

1 tsp EPICURE Minced Garlic

1 red bell pepper

1 tbsp EPICURE Creamy Garlic Hummus

½ tsp EPICURE Pesto

½ tsp EPICURE Smoked Paprika

1 zucchini

1 C cocktail tomatoes

1 C chickpeas

1 700g jar strained tomatoes

FETA

1 tbsp honey

EPICURE Sea Salt Black Pepper to taste

DIRECTIONS

Heat the olive oil in a large frying pan over medium heat. Add chopped onion and red pepper, Minced Garlic, Creamy Garlic Hummus, Pesto, Smoked Paprika and cook, stirring, for 3 minutes or until softened and aromatic.

Add chopped zucchini, cocktail tomatoes , canned chick peas(or make chickpeas from scratch-follow this recipe) and cook, stirring for 3-4 minutes until the veggies are starting to get tender. 

Add the starined tomatoes and bring to a simmer. Reduce heat to low. Cook, slightly covered, stirring occasionally, for 10-15 minutes.

Stir in honey at the end. Preheat the oven to 400 degrees while the chickpea mixture cooks.

Remove the mixture from heat. Top with feta slices and freshly ground black pepper. Bake uncovered for 10 minutes. Sprinkle with fresh basil or parsley. Serve hot with or without breads or cooked grain.
