Turkey Bean Enchilada

Ingredients

1 cup cooked turkey

1 pkg EPICURE Enchilada

1 cup water

3 tbsp tomato paste

7 Corn tortillas

2 cups rinsed and drained black beans

¼ cup chopped pickled jalapenos(optional)

1 tbsp coconut oil

½ lemon

¾ cup grated cheese

EPICURE Sea salt to taste

EPICURE Black Pepper to taste

DIRECTIONS

Whisk seasoning, water and tomato paste.

Place beans, turkey and ½ of your prepared sauce in 4 cup Prep Bowl, mix well.

Grab ¼ sheet pan lined with silicone liner,

pour 4 tbsp of prepared Enchilada sauce on top. Microwave remaining sauce for 1-2 minutes. Add oil to Enchilada sauce, it will melt easily. Using 2 in 1 Citrus Press juice lemon and add to Enchilada sauce. Place tortillas in Epicure’s Sauté Pan, flash fry them on both sides and dip in Enchilada sauce.

To assemble the enchiladas, set up an assembly line including: tortillas, turkey bean mixture, and cheese. Lay out a tortilla, and spread 1 Sauté Spoon of bean mixture over the surface of the tortilla, then sprinkle with 1 tbsp cheese. Roll up tortilla and place in a Multipurpose Steamer or greased baking dish seam-side down. Assemble the remaining enchiladas. Then spread any remaining sauce evenly over the top of the enchiladas, followed by any extra cheese. Microwave for 5 minutes or bake uncovered for 10 minutes, until the enchiladas are cooked through and the tortillas are slightly crispy on the outside. Transfer the baking dish/ steamer to a cooling rack. Enjoy!
