Swedish Meatballs with Polenta

SWEDISH MEATBALLS with Polenta

Ingredients

1 pkg EPICURE Swedish Meatballs, divided

1 lb (450 g) lean ground pork

1/2 pkg EPICURE Crispy and Crunchy coating or breadcrumbs

1 tbsp oil

1 cup water

1/4 cup milk, your choice

1 tsp soy sauce

POLENTA

1/2 pkg EPICURE Polenta

½ cup water

½ cup milk of your choice

DIRECTIONS

In a large nesting bowl, combine pork, Crispy and Crunchy coating, and 2 tbsp Swedish Meatballs seasoning. Mix well. Form into 16 meatballs (about 2 tbsp each). 

In Sauté Pan, heat oil over medium heat. Add meatballs; cover and cook 10 min, flipping halfway. Meanwhile, in a smaller nesting bowl whisk remaining seasoning with water, milk, and soy sauce.  Remove meatballs from pan and set aside. Do not clean pan. Reduce heat to low and add sauce mixture to pan. Stir constantly until thick. Return meatballs to pan and toss with gravy.  

PREPARE POLENTA

Add milk, water and Polenta mix to Square Steamer steamer, whisk well.

Microwave for 5 minutes. Remove from the microwave and make sure that there are no lumps. Add 1/3 milk, 1 tsp butter, mix and put into the microwave for 8 minutes.
Plate polenta with meatballs. Sprinkle with fresh parsley, green onion or chives. Enjoy!
