Strawberry Pineapple no bake Cheesecake
Ingredients
1 prepared 9" graham pie shell or prebaked crust
1.25 cup crumbs
0.25 cup melted butter
1 tsp Epicure Summer Berry Dip
1 pkg, divided Berry Swirl No-Bake Cheesecake Mix
1⁄2 cup fresh strawberries
1 Tbsp Rum (optional)
3/4 cup pineapple
1 brick (8 oz/250 g) cream cheese, room temperature
1 1 ⁄2 cup whipping cream
DIRECTIONS
Mix all crust ingredients in large nesting bowl and fill your pie shell with the mixture, making sure that it is tightly packed.
Place strawberries in blender, add 1 Tbsp Berry Swirl no bake Cheesecake mix and rum, blend well. Set aside.
Using a stand mixer or hand mixer, beat softened cream cheese until fluffy, add remaining mix. Beat on medium-high until smooth. Scrape the sides of the bowl with Corner Spatula. Gradually add whipping cream until soft peaks form. Add pineapple and mix using Sauté Spoon . Fill into prepared pie shell; smooth top. Dollop strawberry mixture over top. Using a toothpick or butter knife, swirl to desired look. Decorate with fresh strawberries. Cover with cello wrap and freeze 6 hours, or until set. Refrigerate until ready to serve. If making ahead, keep frozen and place in refrigerator prior to serving.
