Nashville Nuggets Power Bowl

Ingredients

1 pkg Nashville Hot Chicken Sandwich Seasoning

1 lb cubed chicken thighs

1 egg

1 cup cooked rice

1 cup spinach

1 cup Romaine lettuce

1 cup sliced Red Bell pepper

1 cup peas

1 cup sliced carrots

1 cup cooked cauliflower

1 cup shredded red cabbage

1 cup julienned cucumber

CAESAR SALAD DRESSING

2 tbsp Epicure CAESAR dressing

2 tbsp mayonnaise/yogurt

1-2 tsp EPICURE Minced Garlic

1 tbsp Lemon juice

¼ cup milk

¼ cup Parmesan cheese(optional)

ROASTED CHICKPEAS

1 can rinsed and drained chickpeas

1 tbsp olive oil

Epicure Smoked Spanish Paprika

DIRECTIONS

Preheat oven to 400˚ F. Line 1/4 Sheet Pan with 1/4 Sheet Pan Liner and Cooling Rack.

Whisk egg in a large nesting bowl. Add chicken; toss to coat, add seasoning.

Using Grip and Grab make sure that chicken is evenly coated and transfer it to the prepared Sheet Pan.

Bake 18–20 min, or until cooked through.

 Meanwhile wash, cut and slice veggies using 4 in 1 Mandoline .

PREPARE Roasted Chickpeas.

Place chickpeas in the medium size nesting bowl, pour olive oil, add seasoning, stir well, make sure chickpeas is evenly coated, and place on Sheet Pan with silicone liner. Roast in the 400F preheated oven until crunchy.

Prepare dressing by mixing all the ingredients. Assemble your Power Bowl as you desire. Enjoy!
