Best ever baked butter chicken

Ingredients

1.5lbs Chicken thighs - skin removed

BUTTER CHICKEN MARINADE:

1/2 cup plain yogurt, full fat

1 /2 lemon - squeezed

1 package EPICURE Butter Chicken

BUTTER CHICKEN CURRY SAUCE:

1 small onion diced

2 Tbsp butter

1 cup tomato paste

1 can coconut milk

SERVING:

Options for garnish - cilantro

DIRECTIONS

Preheat oven to 200°C / 400°F. Mix the marinade ingredients in a bowl, then add the chicken and toss to coat, marinate for 10 minutes or overnight. In a large oven proof sauté pan, add butter. Over med high heat, stir in diced onion and cook till translucent and soft. Add tomato paste and coconut milk to the sauté pan. Mix well. Place marinated chicken in pan on top of sauce with smooth side up. (side that had skin). Scrape ALL marinade out of bowl and dab onto chicken surface.

Bake 45 minutes, baste sauce over chicken at the 30 minute. Cook an additional 15 minutes. Rest for 5 minutes. Serve over Basmati rice and garnish with cilantro
