Enchiladas
ENChiladas
Ingredients
2 tbsp Tomato paste
1 c water
1 pkg Epicure Enchilada sauce
½ lime juice
1 tsp coconut oil
1 c canned black beans, rinsed and drained
2 c cooked chicken
1 c grated cheese, divided
6 corn tortillas
DIRECTIONS
Whisk first 3 ingredients and place in the microwave for 2 minutes. Once thickened add lime juice and coconut oil and stir.
In a medium sized bowl add cooked chicken, beans and ladle 2 scoops of the Enchilada sauce and 3/4 c grated cheese. Mix well.
Spread filling between tortillas, roll up and arrange seam side down in a single layer in the rectangular steamer. Top with remaining sauce and 1⁄4 cup cheese.
Cover; microwave on high, 6–8 min, or until heated through.
OVEN
Preheat oven to 350° F. Bake, uncovered, 15–20 min or until heated through and cheese has melted.
