Southern Vegan Balls with Pesto Carrots and Tzatziki

Ingredients

1 tbsp olive oil

1 pkg Epicure Veggie Burger

1/2 c hot water

3 tbsp lemon juice

1 c grated zucchini

1 c cooked quinoa

1 pkg Epicure Southern Baked Mix

1 carrot

1/2 tsp Epicure Pesto Sauce Mix or

Epicure Bruschetta Seasoning

1/2 tsp Epicure Toasted Sesame

1 long English cucumber peeled and grated

1/2 c sour cream/yogurt

1/2 tsp Epicure Lemon Dilly Dip Mix

1/3 c black olives(optional)

DIRECTIONS

Prepare Veggie Burger Mix according to instructions on a package. Here is the recipe for cooking Quinoa . Using wet hands, shape mixture into balls, roll in Southern Baked Mix. Put olive oil into Fry Pan or Perfect Pan. Cook for 5-7 minutes. Set aside.

Sauté or steam in multipurpose Steamer thinly sliced carrots flavoured with Pesto Sauce Mix and Sesame Seeds. Peel and grate cucumber, squeeze out excess of water.

Mix cucumber with sour cream/yogurt and Lemon Dilly. Serve on a big platter.
