Pina Colada Coconut Shrimp

Ingredients

½ lb shrimp

2 c flour or Epicure GF Pancake and Waffle Mix, divided

½- ¾ cup milk

1/2 tsp EPICURE Chili Flakes and Garlic Topper

1 Tbsp EPICURE Pina Colada Mix

1 cup unsweetened coconut

1 pkg EPICURE Crispy and Crunchy Coating

PINA COLADA DIP

1/3 cup crushed pineapple

¾ cup sour cream

2 Tbsp EPICURE Pina Colada mix

Fresh pineapple

1 Tbsp brown sugar

1 tsp EPICURE Cinnamon

DIRECTIONS

Prepare batter by mixing flour, milk, Chili Flakes and Garlic topper and Pina Colada mix. Let the batter sit for 20 minutes.

Prepare Pina Colada dip.

Place crushed pineapple, sour cream and Pina Colada mix in the small Nesting Bowl. Whisk well. Set aside.

Prepare shrimp by removing tails and patting dry. Mix coconut with Crispy & Crunchy coating.

Prepare 3 bowls - one with flour/ GF Waffle mix, one with the batter, and finally one with the mix of coconut and Crispy and Crunchy. Dredge the shrimp in flour, dip it in the batter, and roll in the coconut mix.

Set air fryer for 400F and 6 minutes, 3 minutes for each side.

Using Basting Brush put little oil on the Air Fryer tray, transfer coated shrimp and start frying. Remember to flip in 3 minutes.

Peel, core, and cut one fresh pineapple into rings. Place in the medium sized Nesting Bowl. Sprinkle with brown sugar and cinnamon. Make sure the pineapple is coated. Remove shrimp from Air Fryer. Change the temperature to 375F and set the timer for 15 minutes. Serve with rice. Enjoy!
