Mediterranean Couscous Salad
Ingredients
11/2 cup pearl couscous
11/2 cup water
1 Tbsp EPICURE Nourish Broth
1 tsp butter
1/2 English cucumber diced
1 pint cherry tomatoes halved
1/2 cup crumbled Feta cheese
1/4 cup Kalamata olives halved
1 cup bocconcini halved
1 can rinsed and drained chickpeas
1 cup bell pepper diced
3/4 cup halved artichoke hearts
DRESSING
1/4 cup olive oil
3 Tbsp lemon juice
1 tsp EPICURE Sweet and Spicy Mustard
1 Tbsp Epicure Lemon Dilly
1/4 tsp EPICURE Roasted Garlic Aioli
1 tsp EPICURE SPG
DIRECTIONS
Microwave couscous with water and Nourish Broth for 14 minutes in Round Steamer. Add butter.
Add veggies and cheese once couscous cools down.
Whisk together dressing ingredients and toss well.
Season to taste. Enjoy!
