No Knead Pumpkin Bread

Ingredients

1/3 C pumpkin puree

1/4 tsp dry yeast

0.5 C warm water

1/2 tsp honey

1/2 tsp Epicure Pumpkin Pie Spice or Apple Pie spice

2 C flour

0.5 tsp salt

Assorted seeds:

pumpkin seeds, poppy seeds,

sesame seeds

DIRECTIONS

Combine first 5 ingredients in large mixing bowl. Mix well.

Add 1.5 c of flour, Epicure Pumpkin Pie or Apple Pie spice, salt, stir, no knead, cover with plastic wrap. Dough will be shaggy and sticky. Let rise for 12 hours.

Preheat oven to 400 F.

Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it. Add remaining flour (1/2 C) and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a loaf. Transfer to Epicure Rectangular Steamer . Score the bread with sharp knife.

Scatter the seeds over the bread surface. You might need to press them in slightly. Cover with lid and bake for 20 minutes, then remove lid and bake another 10 - 15 minutes, until loaf is beautifully browned.
