Lemon Chicken Piccata
Ingredients
2 chicken breasts
1 tsp butter
2 tsp olive oil
1 lemon
¼ tsp Epicure Roasted Garlic Aioli
1/3 c Epicure Easy Peasy Bagel Pancake Waffle Mix
1 tsp Epicure Tuscan Chicken Burger
SAUCE
¾ c half and half
1 tsp cornstarch mixed with 1 tbsp water
2 tbsp Epicure Minced Garlic
1.5 C prepared Epicure Nourish Broth
2 tsp Epicure Tuscan Chicken Burger
3 tbsp capers
2 tsp chopped fresh parsley
Epicure Sea Salt (Grinder), to taste
Epicure Black Pepper (Grinder), to taste
DIRECTIONS
Butterfly and tenderize chicken breasts by pounding them with a meat tenderizer. Mix flour with Roasted Garlic Aioli, Tuscan Chicken Burger mix, Black Pepper and Sea Salt.
Using 2 in 1 Citrus Press squeeze half a lemon over the chicken. Dredge chicken in flour mixture.
Bring frying pan to a medium heat with olive oil and butter. Fry 3- minutes on each side or until when pierced clear juices running. Remove from the pan.
Mix first 5 sauce’s ingredients in 4 cup Prep Bowl. Pour your sauce into frying pan, cook on low to thicken up. Add chicken, parsley and sliced lemon. Serve with green beans.
