Cod with Mango Salsa
COD with MANGO SALSA
Ingredients
3 pieces of cod
2 leeks
1 tbsp olive oil
1/2 lemon
1 red bell pepper
½ red onion
1 mango
1 tsp EPICURE Poco Picante
Epicure SPG
Epicure Sea Salt (Grinder), to taste
Epicure Black Pepper (Grinder), to taste
DIRECTIONS
Wash veggies.
Slice leeks, red bell pepper with ceramic knife, chop onion with 4 in 1 Mandoline .
Bring frying pan to a medium heat with olive oil, add veggies and Poco Picante.
Using 2 in 1 Citrus Press squeeze lemon juice, add to the pan, mix well and sauté.
Cut fish into smaller pieces, pat it dry, sprinkle with sea salt and pepper or SPG.
Using Y-peeler peel mango. Cut it into small pieces and add to the frying pan.
Place cod on top of stirred salsa, cover with lid and let simmer for 10 minutes or until fish is done.
Serve on the bed of greens with a glass of dry white wine.
