Lemon Chicken - Better than Takeout
Lemon Chicken
Ingredients
4 chicken breasts - cut into strips
Shake and Coat Mix
1/2 cup EPICURE Easy Peasy Pancake and Waffle mix
2 Tbsp crushed roasted almonds (optional)
2 Tbsp EPICURE Rotisserie Chicken Mix
1/4 tsp Sea Salt
1/8 tsp Black Pepper
Lemon Glaze
1 /2 package EPICURE Luscious Lemon Curd
1/4 cup water
1 tsp butter - melted
1/2 lemon - juiced = 1 Tbsp lemon juice
EPICURE Everything Bagel Mix optional
DIRECTIONS
Preheat oven to 425 F.
In a larger zip-lock bag, add Easy Peasy Pancake and Waffle mix, crushed almonds and Rotisserie Chicken mix.
Pat dry chicken slices and add to bag. Shake to coat.
Prepare cooling rack by lightly brushing oil over the grates. This will prevent sticking.
Place chicken on a sheet pan with cooling rack on top to allow for air circulation.
Bake for 15 minutes or until cooked through.
LEMON Sauce
Using a 2 in 1 Citrus Press squeeze the juice from 1 lemon. In a prep bowl add lemon curd mix, water, butter and lemon juice. Whisk to make smooth and place glaze in microwave for 2 minutes on high.
Add more time if needed.
Pour glaze over cooked chicken and sprinkle with Everything Bagel Mix. Serve with rice and veggies. Enjoy!
