Irish stuffed baked potato
Ingredients
6 large baking potatoes
1.5 cup finely chopped cabbage
1/2 cup finely chopped onion
3 slices bacon, chopped
1/2 cup milk
1/4 cup butter
1 tbsp EPICURE Carne Guisada or Donair Seasoning
1 tbsp EPICURE SPG
3/4 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F(175 degrees C).
Scrub potatoes and place in Round Steamer. Steam for 5 minutes; turn over and cook for another 5 minutes. Scoop potato flesh using Prep Pro Scoop into a 4 Cup Prep Bowl; reserve potato skins/boats. Set aside.
Microwave bacon for 5 minutes in Multipurpose Steamer with a tray.
Shred cabbage and onion with 4 in 1 Mandoline . Cook and stir cabbage, onion in a Sauté Pan over medium heat, add Carne Guisada, bacon, milk, butter and SPG, mix well, and cook for about 8 minutes. Stir in potato flesh and cheddar cheese.
Pile potato mixture into potato skins and place stuffed potatoes on a 1/4 sheet pan lined with silicone liner. Sprinkle with Better than Bacon topper , bake in the preheated oven for 8 minute at 400F.
