Healthy Breakfast Sandwiches on the Go

Ingredients

6 eggs

1/4 c milk

2 tbsp Epicure Guacamole Seasoning 

1/4 tsp Epicure SPG

1 tsp olive oil

1/3 red bell pepper

¼ onion

5 cocktail tomatoes

2 mushrooms

6 slices of cheese

EPICURE Sea Salt to taste

EPICURE Black Pepper to taste

DIRECTIONS

Whisk eggs, milk, Guacamole dip mix and SPG in 4 C Prep Bowl. Put aside.

Preheat Sautee pan with oil on medium heat. Meanwhile chop pepper, onion, tomatoes and mushrooms, add to the pan. Let it cook for couple minutes. Add vegetables to eggs, stir.

Preheat oven to 375F. Line 1/4 sheet pan with silicone liner. Using basting brush spread olive oil on the silicone liner. Pour egg mixture on the baking sheet lined with silicone liners. Bake for 9 minutes at 375F.

Flavour pieces of chicken with Maple Miso and steam using rectangular steamer for 3-3.5 minutes in microwave.

Toast English Muffins. Using 3 in 1 Burger Press cut out circles in cooked eggs. Epicure Prep Bowls are also perfect cutters.

Shred chicken with 2 forks. Assemble sandwiches. Wrap in tin foil, place in Ziploc bag and freeze up to 4 months.
