Greek Casserole with Eggplant

Ingredients

2 ( 1.5 lb) eggplants

1 lb ground lamb, chicken or pork

1 tbsp olive oil

1 grated onion

1 tbsp Epicure 3 Onion Dip Mix

2 tbsp bread crumbs

1 pkg Epicure Simply Better Baked Beans or 1 pkg Epicure Speedy Lasagne

125 ml water

1 c grated Gouda cheese

1 sliced tomato

Sauce ingredients:

2 eggs

125 ml of milk

1 tbsp of flour

DIRECTIONS

Peel skin of eggplants, cut into thick slices, salt and put aside.

Place olive oil in frying pan, add grated onion and 3 Onion Dip Mix, saute until translucent. Add meat, bread crumbs, Simply Better Baked Beans Seasoning and water, mix and cook until done - 10 minutes.

Rinse off and dry your eggplant slices.

Preheat oven to 350F.

In Epicure Multipurpose Steamer lay eggplant slices with meat and grated cheese.

The last layer should be covered with tomato slices. Prepare sauce by mixing all ingredients and pour over the casserole. Bake in oven for 25-35 minutes.
