Chicken Caesar Salad
Ingredients
1.5 tbsp Epicure BBQ Chicken & Rib Rub
1.5 tbsp olive oil
1.5 tbsp lemon juice
2 chicken breasts
2 tbsp Epicure Caesar Salad Dressing
½ c mayonnaise
1 tbsp lemon juice
¼ milk
¼ olive oil
2 tbsp grated Parmesan cheese
Romaine Lettuce
½ c – ¾ c croutons
DIRECTIONS
In Epicure prep bowl mix first 3 ingredients.
Butterfly chicken breasts, place them in Epicure 4 in 1 prep bowl, add your marinade mixture and make sure that chicken is evenly coated.
Place in the fridge.
Prepare salad dressing. Place dry mix, mayonnaise, lemon juice in 4 in 1 prep bowl, mix well using 3 in 1 spatula. Add milk and olive oil, mix well, add Parmesan, stir well. Set aside.
Barbeque chicken breasts.
Cut lettuce with ceramic knife. Place lettuce on a serving plate. Drizzle with dressing, top with croutons, toss everything. Slice chicken and lay on salad.
Serve with a glass of white wine.
