Easy Greek Sheet Pan Chicken
Ingredients
4 Boneless skinless chicken breasts - cut into cubes or slices
2 Tbsp olive oil
1 tsp Epicure Minced Garlic
2 tsp Epicure Greek dressing mix
1 pint cherry tomatoes halved or 2 Roma tomatoes diced
1 small red onion, sliced
1 green pepper, sliced
1 red pepper, slices
1/2 cup olives
1 cup feta cheese cubed or crumbled
1 freshly squeezed lemon
1 tsp Epicure SPG
DIRECTIONS
Prepare oven for 350 F.
Prepare all your veggies - I use a 4 in 1 mandoline as well as a ceramic knife and our cutting boards.
In a large mixing bowl add cut chicken, oil, minced garlic & Greek seasoning, toss to coat.
On a baking sheet lined with with Bake & Roll , place chicken on sheet and spread out evenly.
Then add additional items on top of chicken finishing with feta cheese.
Using your Ceramic knife - cut lemon in half. Place in your 2 in 2 in 1 Citrus Press. and squeeze over the top of sheet pan ingredients
Sprinkle with SPG.
Bake covered for 20 minutes -
(Kitchen hack - use your additional Epicure Bake & Roll and set over top)
Then remove cover and bake an additional 10 minutes.
