Dijon Tarragon Chicken Salad

Ingredients

1/3 C slivered almonds

1 Chicken breast

½ - ¾  tsp EPICURE Dijon Tarragon Dressing Mix

½ C Red Seedless Grapes

½ tsp Dijon Mustard

1/2 C yogurt/sour cream/mayonnaise

½ C diagonally sliced celery and green onions

Juice of half lemon

1 tsp EPICURE Dijon Tarragon Dressing Mix

EPICURE SPG or Sea Salt to taste

DIRECTIONS

Place almonds in the single layer on a 1/4 Baking Sheet lined with silicone sheet pan liner and roast in the preheated oven for 7 minutes.

Using Prep Pro Knife cut chicken into bite size pieces, add Dijon Tarragon Dressing Mix, mix well and microwave for 3 minutes in Rectangular Steamer. Cut grapes in half. Remove almonds from the oven, set aside. Remove the chicken from microwave, let it cool.

Juice half a lemon with 2 in 1 Citrus Press.

In a 4 Cup Prep Bowl stir mayonnaise or sour cream or yogurt whichever you are using, with mustard, Dijon Tarragon Dressing Mix, lemon juice, add almonds, grapes, celery and green onions. Make sure that chicken is cold, and incorporate into your mixture.

Serve with your favourite bread.
