Cauliflower Bites with General Tao

Ingredients                             

1 prepared EPICURE General Tao Sauce

1 cauliflower trimmed and cut into small florets  

2 bell peppers

1 tbsp EPICURE Everything Bagel Topper

2 tbsp chopped green onions

Beer batter:

2/3 c cornstarch

1 c all-purpose flour

1.5 tsp baking powder

1 tsp Epicure Sea Salt

4 large eggs, lightly whisked

3/4 c IPA beer

Directions

Prepare General Tao Sauce according to instructions on the package.

In a large bowl using Epicure Mini Whisk whisk together cornstarch, flour, baking powder and salt. Whisk in eggs and beer. If batter is very thick, adjust consistency with more beer. Batter should coat cauliflower but not be pasty.

Pour enough oil into a heavy-bottomed skillet so it will cover cauliflower about half way. Drop a small bit of batter in oil to test, if it rises to top and bubles, oil is ready. Fry turning several times, until golden brown and crunchy, about 4-6 minutes.

Remove and set on paper towels.

Meanwhile saute sliced pepper in Epicure Sauté Pan for 1 minute, add General Tao sauce and fried cauliflower, toss everything. Transfer to a serving platter and garnish with Everything Bagel Topper and green onion.
