Carrot Cake Tipsy Petites with Sesame & Sunflower Seeds
Ingredients
1.5 c grated carrot
¾ c oat flakes
½ c blanched, finely chopped and roasted almonds
1¾ c flour
½ tsp baking powder
1/3 c sunflower seeds
½ c cranberries soaked in liquor of your choice and chopped
2 tbsp Epicure Toasted Sesame
1 tsp Epicure Carrot Cake Dip
1 tsp Epicure Apple Pie Spice
1.5 tsp Epicure Cinnamon or Pumpkin Pie Spice
100 ml of liquid honey
2 whole eggs
100 ml of olive oil
Directions
Preheat oven to 350° F.
Place Perfect Petites on a Sheet Pan. Lightly brush with oil; set aside.
In a bowl mix dry ingredients, add grated carrots. Set aside.
In another bowl, mix the eggs, honey and oil.
Combine dry and wet ingredients, mix well.
Bake 15-20 minutes, until toothpick inserted comes out clean.
Cool down completely, remove from silicone mold.
