Carne Guisada stuffed yams

Ingredients

1 big Yam or Sweet Potato

1 tbsp olive oil

200 g ground chicken

1 Green Bell Pepper

½ yellow onion

1/3 c grated hard cheese

Toppings: avocado, cilantro (optional)

1 c water

1 pkg EPICURE Carne Guisada

EPICURE Sea Salt to taste

EPICURE Black Pepper to taste

DIRECTIONS

Wash potato and pierce the skin. Place in Multipurpose Steamer and microwave for 6 minutes. Set Sauté Pan on medium high with 1 tbsp of olive oil. Add meat and separate with Ground Meat Separator while frying until browned. Using Ceramic Knife cut veggies and add to the meat. Let it cook for 5 minutes.

Whisk water in a 4 cup Prep Bowl with Carne Guisada seasoning, set aside. Once onion is translucent add seasoning to the meat filling.

Remove cooked yam from steamer, cut in half and scoop the inside out. Add yam’s pieces to the meat mix. Fry for another 2 minutes. Place yam boats on a ¼ Sheet Pan lined with a silicone liner. Stuff yam with cooked filling, sprinkle with cheese and place in the microwave for another  2 minutes. Top with avocado and cilantro if you wish.
