Azteca tortilla soup

Ingredients

5 C water

2.5 tbsp EPICURE Vegetable Broth

2 C crushed tomatoes

1/2 C creamed corn

1/2 lime

1 tortilla

1 can beans of your choice drained & rinsed

pinch EPICURE Nacho Cheese Mix

EPICURE Sea Salt Black Pepper to taste

DIRECTIONS

In 8 C Multipurpose Pot mix water with vegetable broth, add Azteca Tortilla Soup Mix and tomatoes, return to boil.

Cut 1 tortilla into the little strips, place in the oven on top of the cooling rack , toast for couple minutes.

Add drained and rinsed beans and corn, cook for about 15 minutes.

Using 2 in 1 Citrus Press juice lime and add juice to soup.

Divide between bowls, top with avocado, sour cream flavoured with Nacho Cheese mix and toasted tortilla stripes.
