Zippy Cauliflower and Cheese soup
Ingredients
1 large cauliflower, coarsely chopped
1 large onion, diced
1 tsp Epicure Minced Garlic
6 cups water
2 Tbsp Epicure Nourish Broth
2 tsp Epicure Herb and Garlic Seasoning
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
2 tbsp butter
2 tbsp Epicure Easy Peasy Bagel, Pancake and Waffle mix or all-purpose flour
1 package Epicure Ooey Gooey Queso
1 cup cream
1 cup grated low-fat cheddar cheese
DIRECTIONS
Roughly cut up cauliflower using ceramic knife. Add cauliflower to Multipurpose Pot.
Using the 4 in 1 Mandoline, dice 1 med onion. Add to Multipurpose pot. Add 1 t minced garlic and with lid on, microwave for 6-7 minutes or until vegetable are tender.
Using the meat separator - mash veggies to consistency wanted for soup. Set vegetables aside to cool.
Melt butter over medium-high heat on stovetop. Stir in Easy Peasy gluten free flour and Ooey Gooey Queso. Cook but be careful not to burn. Stirring until bubbly.
Add Nourish broth mix and 1 tsp herb and garlic to 6 cups of water. Stir using sauté spoon and add broth to flour mixture, stirring continuously. Add cream, stir and bring to a simmer, stirring frequently, until thickened. Add cheddar and stir until melted.
Now add the mashed cauliflower to cheese sauce. Bring soup to a simmer and serve with flavoured croutons and salt & pepper to taste.
