West Coast Shrimp Chowder

Ingredients

2 Russet potatoes

2 C water

1 pkg EPICURE Home Style Chicken Stew

2 C light coconut milk

1 C frozen green peas

1 C frozen corn kernels

1-1.5 C peeled shrimp

Epicure Better than Bacon Topper

EPICURE Chili Flakes and Garlic

EPICURE Sea Salt and Black Pepper to taste

DIRECTIONS

Peel potatoes with Y-peeler, remove eyes.

Chop potatoes and place with the water in Round Steamer , microwave for 7-10 minutes.

In 4 C prep bowl , using mini whisk, mix well coconut milk and Home Style Chicken Stew seasoning.

Remove potatoes from the microwave, add peas, corn and coconut milk mix, microwave for another 3 minutes. Check the flavor, add shrimp.

Microwave for another 2 minutes.

Ladle chowder, sprinkle with chili flakes and Better than Bacon.
