Sweet & Sour Stir fry

Ingredients

1 c washed rice

1 pkg EPICURE Sweet & Sour Stir Fry

1 C pineapple chunks with juice

2 tbsp white vinegar

2 tbsp water

2 tbsp Soya sauce

1 lb boneless, skinless chicken

¼ C corn starch

1 carrot

2 bell peppers red and yellow

1 shallot

DIRECTIONS

Prepare rice according to this recipe. Place Epicure Sweet & Sour Seasoning in 4 C Prep Bowl, add water, vinegar, low sodium soya sauce and pineapple with juice. Set aside.

Place chicken and cornstarch in another 4 C Prep Bowl, mix well, so chicken is evenly coated. Preheat wok over high heat, then swirl in 3 tbsp oil. Stir -fry chicken until cooked. Peel carrot with

y-peeler and slice diagonally. Slice bell peppers. Chop shallot.

Add carrots to chicken and cook for 2 minutes, add remaining vegetables. Stir in prepared Pad Thai sauce.

Plate rice and top with Stir- Fry.

Sprinkle with green onions.
