SWEET GARLIC THAI SHRIMP
Ingredients
1 tablespoon oil
1 medium onion, diced
1 pound ground beef
1/2 tsp Roasted Garlic Aioli
3 tablespoons Cowboy Salsa
1 bell pepper, diced
1 small can (5.2 oz) tomato paste
1 can (19 fl oz) diced tomatoes
1 can black beans (juice included) (Optional: substitute for another favorite)
1 cup frozen corn, canned corn, or fresh corn
DIRECTIONS
Directions In a large fry pan, heat 1 tablespoon oil over medium heat.
Add diced onion and ground beef. Cook until the beef is browned and the onions are softened.
Stir in minced garlic and Cowboy Salsa Mix.
Cook for another 1–2 minutes until fragrant. Add diced bell pepper, tomato paste, diced tomatoes (with juice), and black beans (with juice).
Stir well to combine. Simmer: Reduce heat to low.
Add corn and gently stir. Let the chili simmer uncovered for about 10–15 minutes, stirring occasionally.
Top with grated cheese, a dollop of sour cream, and fresh cilantro if desired.
