Sheet Pan Greek chicken
Ingredients
1 lb (454g) skinless chicken thighs
1/2 tsp Garlic Pepper with a Twist of Lemon
1 c cherry tomatoes
1 can rinsed and drained chick peas
1 bell pepper sliced
1 pkg Mediterranean Greek Seasoning
2 tbsp balsamic vinegar
2 tbsp olive oil
1/4 cup crumbled Feta
DIRECTIONS
Preheat oven to 425° F.
Line baking sheet with liner or parchment paper
Place chicken in a large bowl, flavour with Garlic Pepper with a Twist of Lemon seasoning. Add tomatoes, chickpeas, bell pepper. In a separate bowl mix Mediterranean Greek seasoning with balsamic vinegar and olive oil. Mix well and pour into the big bowl with chicken and veggies. Toss until well coated.
Arrange in a single layer on Sheet Pan. Roast 16 mins or until chicken is cooked through. Remove from oven and quickly sprinkle feta cheese crumbles over and cook an additional 3 minutes to soften cheese. If desired, serve with pitas and optional toppings.
