Pesto Cottage Cheese Pizza

Ingredients

PIZZA BASE

1 c cottage cheese
2 eggs
1/3 pkg EPICURE Pancake and Waffle mix or 60g flour

1 tsp EPICURE Super Green Pesto

PESTO SAUCE

1 pkg EPICURE Super Green Pesto seasoning( minus 1 tsp for the base)

3-4 c finely chopped spinach

1 c olive oil

1/4 c parmesan cheese

1/4 c nuts/seeds

TOPPINGS OF YOUR CHOICE

DIRECTIONS

Mix all ingredients together, spread onto a 1/4 sheet pan lined with silicone liner. Bake in a 180C oven for 15-18 minutes or until golden. Take it out, add your toppings, sprinkle Epicure SPG and pop it back in the oven for another 10 or so until cooked. Serve with salad of your choice. Enjoy!
