Egg BItes

Ingredients

6 eggs

1 cup 2% cottage cheese

1 tsp EPICURE SPG

2 tsps EPICURE 3 Onion

1 tsp EPICURE Guacamole

1 Tbsp oil

1/2 yellow onion , diced

1 red pepper diced

6 cherry Tomatoes - cut in half

1 TBSP oil

3 cups fresh Spinach

1/2 cup grated Parmesan cheese

DIRECTIONS

Preheat oven to 350°F (175°C).

  1. Blend together 4 eggs, 1 cup cottage cheese, 1 tsp SPG, 1 tbsp 3-Onion Dip Mix, and 1 tbsp Guacamole Mix in a blender until smooth.

  2. Heat 1 tbsp oil in a sauté pan. Cook diced onion for 2 minutes, then add 1 diced bell pepper and 1 cup halved cherry tomatoes. Remove from pan and set aside.

  3. In the same pan, heat another 1 tbsp oil, add 3 cups fresh spinach, and cook until wilted (about 5 minutes). Squeeze out excess moisture.

  4. Place 2 trays of muffin makers on a sheet pan. Divide sautéed veggies evenly among 12 cups.

  5. Pour egg mixture on top to fill each cup.

  6. Bake for 15 minutes. remove from oven and sprinkle with Parmesan cheese. Return to oven and bake for another 5 minutes.

  7. Let cool slightly, remove bites, and enjoy!

Storage Tip: Freeze extras in bags for quick breakfasts!
