Mediterranean Chicken with Chickpeas

Ingredients

(Serves 4)

1.5 lbs chicken thighs (boneless, skinless)

1 can (14 oz) chickpeas, drained & rinsed 2 cups cherry tomatoes (or chopped Roma tomatoes)

1 red bell pepper, chopped (optional but adds color & volume)

1 small red onion, sliced (optional) Seasoning & Marinade

2 tbsp Mediterranean Greek Seasoning 2 tbsp olive oil

1 tbsp lemon juice

1 tsp Roasted Garlic Aioli or 1 clove crushed

1 tsp Garlic pepper with a Twist of Lemon

Optional: pinch of chili flakes for heat

Garnish (Optional) Fresh parsley or mint

Lemon wedges

Crumbled feta

DIRECTIONS

Directions Preheat oven to 400°F (205°C).

Season the chicken: In a bowl, combine chicken thighs with olive oil, lemon juice, minced garlic, Mediterranean Greek seasoning, salt, and pepper. Toss to coat.

Assemble the tray:

Spread chickpeas, tomatoes, and (optional) peppers/onions on a parchment-lined sheet pan. Add chicken: Nestle the seasoned chicken on top of the vegetables.

Roast: Bake 28–32 minutes, or until chicken reaches an internal temp of 165°F and tomatoes have softened and blistered.

Finish: Squeeze extra lemon on top. Garnish with parsley and feta if desired.

Make It a Bowl: Serve over cauliflower rice or a simple cucumber herb salad for a low-carb option.
